I'm always looking for a new idea of something interesting to stick in my kids' lunchboxes. We served "pinwheels" at a Relief Society function a few weeks ago so I decided to see if my kids would like this.
I adapted these according to ingredients I already had on hand. Spread plain or chive & onion cream cheese in a thin layer on Sundried Tomato tortillas. Top with bits of ham (lunchmeat). Roll up tightly, slice and enjoy!
Kyler actually asked me to make them for him this morning (the highest compliment a mother could ask for!).
I have made pinwheels before and this is the recipe I used :(many thanks to my cousin's wife Lindsey for the recipe!) These are a little "spicier" but my kids still liked them.
Taco Roll-Ups
8 oz. cream cheese
1 c. sour cream
1 c. shredded cheddar cheese
chopped black olives (to taste--I use about 1/2 of a small can)
taco seasoning (to taste--I use about 1/2 pkg.)
6-8 refrigerated soft flour tortillas.
Mix all ingredients together and roll up. Chill for 1 hour. Slice into 1/2 inch slices to serve.

No, actually I didn't make the ones we had at RS. I'm not sure what was in those...these are probably kind of "plain" compared to those but my kids tend to prefer "plain" :)
I make something similar for my girls using spinach tortilla, turkey, and shredded cheddar. Then they dip it in ranch- they always have to dip something.
