New Year=New Year's Resolutions....Well I told someone today that this year I was resolving to not make any resolutions. :) Truth be told, I do have at least 1 lofty (yet achievable, I hope!) goal and that has to do with FOOD! I seem to have my act together on a lot of things but my meal-planning skills have gone kapooey over the last several years. I don't know what happened....I mean, I used to be good at this. Really, I was. I used to make a MONTHLY (can you believe that?!) shopping trip which meant I had meals planned for an entire month! Well that sort of system hasn't been in place at this house o' mine for way too long and so this year I resolve to get a handle on meal-planning. That means that I actually have to plan our meals! Yikes! To help me get started my mom gave me a new cookbook: Deceptively Delicious by Jessica Seinfeld. (Thanks Gretchen--I put this on my list as soon as I saw your post!) The idea here is to "sneak" the veggies into your food. I hope to employ this strategy most especially on Trev since he is a rolls-and-chips kind of kid. I started this morning and can I just say that it took me back....way back....to the days of making baby food. See, I told you I used to be good at this sort of thing. I used to make ALL of my kids' baby food which is really, really easy; it just involves a little time and forethought. Steam the veggies, puree them in the blender and stick in the freezer til needed. Today I did carrots, cauliflower, spinach, and red pepper. Actually I had Kyler and Kierstyn pick out something from the cookbook and they get to help me make it (how long do you think this plan will work?). For dinner tonight we will be having macaroni and cheese (with cauliflower puree) and for dessert....brownies (with spinach and carrot puree)!!! Later this week we're having sloppy joes (with celery, red pepper, and sweet potato) and lasagna (with sweet potato and cauliflower).

And now for the pancakes.....no, these don't have anything "hidden" in them. Merry Christmas to ME! I got a new griddle (thanks, Kelly) so that I CAN EAT AT THE SAME TIME AS MY FAMILY! How in the world did I ever go this long without this amazingly wonderful contraption?!

That's one beautiful griddle :) You're amazing...that meal goal is one I don't think I could achieve!!
What a fun idea. Let me know how it goes. If my kids ever figure out that "you aren't supposed" to like veggies I may ask for some recipes. As of now they continue to be my giants eating trees.
I'm glad to know I'm not the only one who never gets to eat pancakes/waffles either warm or with my family. Although now with your new fancy shmancy griddle, maybe I am alone...
LOL!! I love the post! I have to say, even I would be hesitant to put pureed veges in my brownies. However, I don't have the problem you have with kids and veges. Believe it or not I get words from my kids if I don't have veges and fruit in the house.
As for the monthly menus, I have been trying that for almost 5 years now. I know I haven't perfected my method yet, and would love to get with you on the hows and why-to's!!
Way to go on the griddle!! I have loved mine from day one!! My biggest thrill was my large waffle iron though. That had to have taken me 2 hours from start to finish before I could sit and eat mine. I have a four waffle maker now. That is awesome! Good cooking!!
I love it....LOVE IT-LOVE IT. IF only T. knew what he was eating. It's kind of fun to sneak them in. Good luck!
