So far, so good. We've had success with 4 recipes!!! I didn't take pictures of them all but here are a couple:
The mac-n-cheese (with cauliflower) was a hit with everyone as were the brownies (with spinach and carrots). The only thing I would do differently with the brownies would be to use regular flour instead of oat flour--the texture was a little grainy. (But the kids didn't complain.)
We also had lasagna (with sweet potato and cauliflower) and it was sooooooo yummy! I LOVED it (and I don't like sweet potato OR cauliflower)!!!! Actually everyone loved it. Good thing I made one to freeze, too. :)
Last night we had sloppy joes and they were yummy, too! I don't like sloppy joes or most of the veggies that were in it (celery, sweet potato and red pepper) but they were sooooo good. (Are you beginning to see why my kids are so picky? I guess I'm not a very good example...)
I'm actually excited to try the next round of recipes!

Question- how much of the nutrients are lost when the veggies are steamed and puree'd? And do you have the calories for those recipes?
Can I have the mac and cheese recipe?

we love sneaking vegi's into our food. My son actually prefers mac and cheese with a cup of butternut squash puree thrown in. And he is my picky eater!

OK, my sis-in-law told me about this book back in OCT and I've had my eye on it. Today, I just ordered my copy. My kids weren't bad eaters until Nathan came along, he is sure picky, but the more veggies I can sneak over on big Nate the better! :)
