We did a pretty good job of sticking to the meal plan last week, esp. through Wed. After that, I strayed a little from my original plan. On Thursday Kelly was home and we ate up all the leftovers. Friday I made the Cowboy Beans. Saturday we had Grilled chicken salad (this is a favorite at our house). Even though the chicken wasn't on my grocery list last week, I had a big bag in the freezer. Kelly did go to the store Sat. night and bought more yogurt and another gallon of milk. (Hope, how does your family drink so little milk? We go through 3 gallons a week!)
For snacks, we had homemade peanut butter cookies, plain muffins, banana muffins, and whatever was left in the pantry. Actually I don't think the kids snacked as much since the food seems to be more filling. Oh, and I made a chocolate cake Sat. night--YUM! I have really enjoyed making (and eating!) the homemade snacks.
I have been surprised at how well everyone has liked all the beans. I was a little wary at first since we don't typically eat so many beans. So far they have all been good. Tonight we're trying the Red Beans and Rice so we'll see how that recipe fares here. And let's just say that we've been slightly more regular around here. :) I have a funny bean story to tell later.....(and it's not what you think!)
So I have a few meals left over from last week and I'm adding one that uses food storage (spaghetti). I'm hoping to make it to Wed. before going to the grocery store again....although we'll probably need milk before then! :)

B: Cereal, oatmeal, or toast
D: CORD (Clean Out the Refrigerator Day)
Saturday
B: Bacon & Egg Biscuits
...and then we're off to Chattanooga for the weekend!

Does anybody have any suggestions for getting veggies into a school kid's lunch? My kids don't like celery or green peppers. What else is pack-able???? If I fix them a meat sandwich, I can put lettuce on it.... I guess maybe I'll just have to make sure dinner has extra veggies.

Do they like carrots? Or what about cucumbers- cucumber dip and maybe make it with extra cucumber in it. I don't make school lunches yet so those are my only suggestions.
Okay sorry- I just read your lunch choices and saw my two suggestions-I'll let you know if I think of anything else! :)
Do they like cherry tomatoes? We take those in lunches, they transport great.
I also make a lot of vegi muffins and cookies. Like pumpkin muffins and zucchini cookies.
My kids looove cut up strawberries and you can sprinkle a tiny bit of sugar on them before you pack them. Also, if they happen to like any type of salad...Old Time Pottery carries these incredible salad bowls that store the dressing in a compartment on top and when it's time to eat, you just mush that top down shake the bowl and VOILA...salad!
My kids also like canned peaches. Hope I may have helped a bit...good luck!
Chris likes the whole carrots with ranch dressing thing. But I'm the kind of mom that's just happy they like fruit:)
$70.00 a week? we go through about 6 gallons of milk a week here at my house, that doesn't leave much left for food. There must be an adjustment to that for larger families.
I like the idea of the cherry tomatoes, (or grape tomatoes), and the vegi cookies or muffins, GREAT idea! my kids love pumpkin choc chip cookies and muffins.
I'd have to make anything with zucchine in it when noone was home to 'discover' that was what was in the food, or they wouldn't ever eat it!!!
