THE Best Chicken Soup EVER

No, really it is! My kids even say so. Kyler proclaimed this "The Best Soup Ever" last night and Kierstyn said, "Mom, even when you're sick, you sure can cook!" :)

This is a knock-off from my favorite restaurant in the whole wide world--Demos'. I like to go there for their Thousand Island Dressing and onion rolls but this soup is way good, too.

Chicken & Rice Soup
Place 3-4 chicken breasts in baking pan with 1/4 c. water and 2 tsp. lemon juice. Cover with foil. Bake at 350* for 45 min.

In large pan, combine:
2 c. water
3 cans chicken broth
2 cans cream of chicken soup
2 tsp. lemon juice
2 tsp. parsley flakes
salt & pepper

Tear baked chicken apart and add to above mixture. Simmer 30-40 min.
In another pan, measure 1 1/2-2 c. rice. Add water and cook.

We like to ladle up a bowl of the soup and then add a couple spoonfuls of rice to it. If you add the rice to the soup, it tends to soak up too much of the broth...especially if you have leftovers. And maybe, just maybe this soup is the reason I'm starting to feel better today. Well, a girl can hope!

It sounds so good!!! If we weren't cutting cream soups from our diet I would have to try this!! I will have to dig out my Sam Andy cook book and figure out how to make cream soup from dry milk. Anyhoo.. it is no old wives tale about chicken soup.... the sodium, liquid and protien together is great for the body!
