for Gretchen: Oatmeal Rolls

Because your post made me laugh today, Gretchen. (I can SO TOTALLY relate to your FHE!) :)

Grandma Lu's Oatmeal Rolls
1 1/2 c. oatmeal (I used quick, but I think you could use old-fashioned, too)
1 1/2 c. scalded milk
1/2 c. shortening
1/2 c. sugar
3 tsp. salt
4 1/2 tsp. yeast
1/2 c. warm water
1 egg
1 c. whole wheat flour
4 1/2-5 c. white flour

Mix oatmeal and scalded milk. Add shortening, sugar, and salt. Cool. Dissolve yeast in warm water. Mix, adding egg and flours, making a soft dough. Let rise. Divide into two parts. Roll each part out in a 12 inc. circle. Cut into 12 wedges and roll into a crescent shape. Let rise. Bake at 375* until brown. Makes 24 rolls.

Hey Jen,

I had to share. I love this recipe!! I just tried it today, using 100% whole wheat flour. I ended up using 4 1/2 cups total. I think I ended up adding just a splash more warm water, too. It looked like they wouldn't rise, but in the oven they puffed up like little bubbles on a pan!! I love them!! Thank you!!!
